perfect soup

I didn't take a picture. Sorry.
Cheesy Potato Soup

3/4 C butter
6 T flour
3 C milk
8 oz Velveeta Cheese

Melt butter in saucepan add flour and mix. Add milk, salt, and cheese. Stir until thick and creamy. Set aside.

5 med. potatoes, diced
1 Tbls dried onion (give or take)
2 tsp salt (give or take I may have done closer to three or four)

Boil in large pan. Once potatoes start getting soft, drain all water except a couple cups. Add frozen broccoli (I did about 1/2 a large package) Stir in cheese mixture. Add 1 can of drained corn. After it'd been cooking for a while (ten minutes or so) I added a couple handfuls of shredded cheese, and about 1/4 to 1/2 cup of milk. It was so yummy.
Lincoln doesn't like soup, but he ate this really good. He told me he really like the corn. I got bread bowls to serve it in, which I think added to the appeal. But I was nervous how it would turn out. It was so good though, I had to share.

Sounds good. I have my own version of the cheesy vegetable soup, but I'll have to try yours now. So this is lowfat right? :) To go with our new years diets?

right. :) It called for 1lb of velvetta cheese, and I only used a little bit. ;) But I've lost 3 pounds. :)
