Day Three

Chicken Marsala :)
Recipe here
Really easy. Basically,
Flour
Garlic
Oregano
pepper
salt
batter the chicken.
Fry it up in the skillet. 2 min on each side. Then smother with mushrooms, add a cup of wine. :)
Does it scare you I said wine? It's cooking Marsala wine. Simmer for 10 minutes! EASY!!!
This is in the same isle as pasta sauce. It was $2.25 at walmart. :)
Proof the kids ate it! (This is Jared's plate, he puts mayo on Broccoli, I do not, I'm not crazy)
This was a yummy dish. I think I would have added a little more garlic (but I love garlic) and some Parmesan cheese. The sauce is very nice and makes a very tender chicken. It was so easy though I could do this anytime I need a fast meal. 226 calories per breast. Some of the other recipes called for heavy whipping cream to make a creamy sauce but that is way too many calories for this momma. :) Enjoy
Want to know why I need a diet coke with my dinner?
Because this is what dinner really looks like. Baby girl on my lap otherwise she's crying and complaining. Lincoln always leaning on me, touching me or wishing he was on my lap. Jared documented the chaos we call dinner. My super disgusted look is because Miss Ruby had just wiped her broccoli covered hands all over my face and neck, She didn't know what else to do with broccoli covered hands! Honestly. I think I need to start getting stronger drinks than diet coke. I wonder if that cooking wine would do anything for me. :)Oh, and we may or may not had to bribe Ruby with sips of my coke to eat the chicken. Punk little girl. She's lucky her birthday is tomorrow and she will be spoiled and spoiled and spoiled.
And because it's her birthday I don't know if I will be making the shrimp linguine tomorrow. We'll have to see how the day goes. :) But I am cooking. :)

Wow dinner sounds crazy at your place. Chad tried making me shrimp Marsala it didn't turn out so great. I guess we should have good luck with the rest of your meals. Keep on cookin.

We did your pizza last night and it was yummy. This looks simple enough too, I bet we could have this.
As for dinner company we are to the point where Delilah is no longer allowed to sit by me during dinner. I was sick of her picking at my food and trying to feed me and trying to sit on my lap. So it's good to know I'm not the only one that has a wild dinner child.

I think Ruby's spiky hair adds a nice thouch to the drama. Congrats on making meals I love getting ideas...ya know for when I can cook again. Yay Jared for keeping up the mayo tradition...and no I did not know that was weird until I was 19...love broccoli!!
