Day Two


Well, I lazied out today and made Turkey Meatballs and Spaghetti. Chicken Marsala tomorrow I promise!!! :)But I don't do meatballs that often and I do have a good recipe that lots of people love(one of my few recipes that really is mine that I made up)

Turkey Meatballs (obviously you don't have to use turkey, I just do because we've been doing turkey for over a year now and we can't tell the difference)

2lbs Ground Turkey
1 egg
1/4-1/3 cup Italian bread crumbs
half a handful of Oatmeal
3 Tbl minced onions
1 1/2 Tbl garlic powder
1/4 shredded Parmesan cheese
1/3 can tomato soup
1 Tbls Worcestershire sauce
Mix together
Take pictures of your cute kids through the window thinking how adorable and sweet they are playing. :)

With a small ice cream scoop put balls on very well greased pan. Remember these shrink so you can do a ton on one pan. I had two cookie sheets stuffed.

Notice said cute daughter is covered in water/mud/dog food from playing in dogs water dish. Do a quick impromptu bath. While bathing said daughter, said cute son steals your camera and takes millions of pictures/videos of this kid.......

Cook Meatballs for ten to 12 minutes at 425. I do 7 then rotate top to bottom and another 5. Because i don't like to do two shifts. I made spaghetti with Prego (my favorite sauce) for Jared and the kids and spaghetti squash for me. My family enjoys spaghetti squash I just didn't have enough for all of them. :)

We used half the meatballs and still had enough for two lunches. Then I froze the other half. You just put them straight in the freezer still on the cookie sheet for a quick freeze (like 20 minutes) Then put them in a gallon size bag and you have them for whenever you need a couple. We use them for sandwiches, quick lunch, add BBQ sauce. They are nice to have around.

And just for fun if you are still with me, in preschool today we did the letter H and one kid brought in HAIR. So fun. We all took pictures, and now you all know how hot I would look as a platinum blonde with long awesome curls. :)

Loved the post and that I'm not the only one who has to stop making dinner a zillion times b/c of their kid.
We love turkey meatballs and I still need to give spaghetti squash a go.
